RECIPES: Light and healthy breakfasts

Summer is a wonderful time for delicious and light breakfasts! Fresh vegetables and herbs, berries and fruits — you can cook almost anything your heart desires.

This time I decided to make a small selection of light and healthy breakfasts. Avocado, radishes, spinach, tomatoes, eggs, berries and, of course, oatmeal.

Baguette with avocado and radish

The recipe used a round sesame bun, but you can choose any other bread. But I'm not quite sure that it will be delicious with dark bread.

Ingredients: baguette or bun, 1/2 avocado, 2 teaspoons lemon juice, a few small radishes, salt and pepper to taste.

Preparation. We toast the bread a little in a toaster or send it to a dry, heated frying pan. Peel the avocado, cut into small pieces and knead with a fork, mixing with lemon juice. Salt and pepper to taste. Radish cut into thin rings or half rings. Spread avocado paste on the bread and spread radishes on top.

Another option — instead of radishes, spread thin slices of lightly salted salmon or other red fish on top.

Fried eggs with tomatoes and spinach in a pit

I really love spinach! I especially like ravioli with spinach and cottage cheese, spinach and garlic, and even just spinach stewed in butter with garlic. Spinach is very useful and does not have a pronounced taste, so it can be added to a huge number of dishes (and even fruit smoothies). So the egg should turn out really tasty and healthy.

Ingredients: 4 large eggs, 1/2 cup of fresh spinach, olive oil, 2-3 tomatoes, pita, salt and pepper to taste.

Preparation. Cut the pita in half and dry it a little on one side. Pour olive oil into a preheated frying pan, then drive in the eggs and start stirring intensively. Then add tomatoes and spinach cut into small pieces, add salt and pepper to taste and mix everything well. Remove from the heat and spread on the pita halves.

I would make one small change here — I would cook scrambled eggs on a mixture of olive and butter. I would crush a few cloves of garlic, fry a little in a mixture of oils and take it out before adding eggs.

Cold oatmeal with berries

I have already published this recipe, but I still decided to remind you about it, since the oatmeal turns out to be very tender and creamy, almost like ice cream! And it is usually prepared from evening to morning, so there is no need to cook breakfast. The recipe, by the way, was begged by our friend from a Swiss chef at the hotel :)

Ingredients: oat flakes, berries, milk, sour cream or Greek yogurt, sugar.

Preparation. In order for the porridge to turn out really tender, it is better to take instant oat flakes. I usually use German Bruggen flakes. Pour your usual portion of cereal into a deep plate, add quite a bit of sugar and pour cold milk so that it covers the oatmeal and there is a layer of milk about 1 finger thick on top. Cover the plate and put it in the refrigerator overnight. In the morning, take out oatmeal, add a couple of tablespoons of sour cream or Greek yogurt and your favorite fruits-berries.

If you want to cook several servings, then mix milk with oatmeal in a small bowl or saucepan.

And, of course, do not forget about berry and fruit salads! Strawberry with banana and yogurt without additives — very tasty and summer breakfast!

And if you mix simple cottage cheese, strawberries, a little cream of 10% and powdered sugar in a blender to a solid mass, you will get a very delicate and delicious curd dessert! The same can be done with any berries — blueberries, raspberries, cherries!
