RECIPES: Chocolate truffles

Tomorrow is Valentine's Day and if you are still puzzling over how to surprise your loved one, I suggest you cook chocolate truffles. Because the most expensive gifts are gifts made from the bottom of your heart and preferably with your own hands. And even if you are absolutely not interested in all this artificially created festive tinsel, this is not a reason not to please yourself with something delicious ;)

I've tried different recipes and they all come down to three main ingredients: chocolate, cream and butter. And already additional flavorings can be anything — orange peel, nuts, cognac, liqueur, coconut chips, etc.

Ingredients: 150 g of dark chocolate, 100 ml of heavy cream (33-35%), 50 g of butter, optional 2-3 teaspoons of ground nuts, orange peel, liqueur, cognac, coffee, etc.

Preparation. Cooking does not take much time and it does not need to have any special skills. Crumble the chocolate and melt it either in the microwave at low power, or in a water bath in a bowl. When the chocolate has melted, add butter there, stir well. Remove from the water bath, add cream and mix everything well again. Let the mixture cool down and add additional ingredients there, depending on your taste. It can be ground nuts, a couple of tablespoons of coffee, liqueur or cognac, orange peel, cinnamon, etc.

When the mass has completely cooled down, use a teaspoon to form balls and spread them on a prepared tray with baking paper. And if you have a pastry syringe, then you can take advantage of the opportunity not to get your hands dirty — then the candy will turn out in the form of droplets. The tray with sweets is sent literally for 15 minutes in the freezer.

If you put the candy in the freezer for 5 minutes (the chocolate is still soft and a bit like plasticine), then hearts can be formed from almost frozen chocolate.

Then you take out, roll each candy in your palms and then roll it into cocoa. Truffles can also be rolled in cookie crumbs, coconut chips, waffle crumbs and ground nuts. But I remembered my experiments with chocolate-covered strawberries (by the way, it's also a very tasty and delicate treat) and decided to play with chocolate a little more!

I melted white chocolate and dipped the already frozen truffles in it — it turned out very tasty!

If the white chocolate is very thick, you can add a couple of drops of vegetable oil there.

And just in case for those who don't know what a steam bath means. There is nothing complicated in this — just choose a small saucepan and a bowl or bowl that would sit quietly on top of the pan without touching its bottom (almost like a lid). Pour a little water into a saucepan, put a bowl of chocolate on top and send it all to the stove. The water boils, steam forms, the bowl heats up, and the contents melt safely without burning or boiling. Usually steam baths are used to melt chocolate, followed by the preparation of cream from it.
