In continuation of the topic about a healthy lifestyle and the eternal question of whether healthy food can also be delicious, I want to offer you some simple and very tasty ideas for salads. Moreover, summer is on the nose — it's time for picnics and lunches in nature. These salads can be safely taken with you on a picnic, without fear of messing with large bowls and other kitchen utensils! Because they are served on small wooden skewers! It will be delicious and convenient, I promise you!
1. Caprese salad. In the first place for me personally is the simplest and most delicious salad — "Caprese"! This is a combination of sweet tomatoes, soft and tender mozzarella, olive oil and basil. If you ordered this salad in a cafe, you would be served mozzarella cut into thin slices with tomato slices, and all this would be seasoned with olive oil and basil (to taste balsamic vinegar). For a picnic, a simpler option is needed: you string pieces of tomatoes (or whole cherry tomatoes) and either balls of mozzarella, or its cheaper locally produced version, cut into cubes, on skewers alternately. Olive oil can simply be taken with you on a picnic — it is useful not only for this salad. Fresh basil can also be replaced with a dry mixture, for example, the same "Italian herbs" are quite suitable. Just please note that tomatoes should be sweet and fragrant. If you take greenhouse-flavored herbs, you are unlikely to be able to enjoy it.
2. Greek salad. There may be several variants of Greek salad and everyone puts there what he loves most. I offer you a more familiar set for us: tomatoes, olives, feta, cucumber and bell pepper (optional). Cut vegetables and cheese into large pieces and string them alternately on a skewer. Pour the same olive oil with dry herbs on top.
3. Fruit salad. Everything is simple here — you string your favorite fruits cut into large pieces on skewers. Since it's not quite the season, it can be canned fruits (pineapple, peach) plus fresh ones (orange, banana, kiwi).
Now I want to offer you quite interesting, even exotic, combinations. They will not be quite in season, so for now we are putting them in the piggy bank.
4. Melon and prosciutto. This is an option for July-August, when fragrant and sweet melons ripen! Those who have tried it will understand me! A wild and incredibly delicious combination of sweet melon and dried meat! However, for an amateur. Of course, I would not advise you to eat melon wrapped in Parma ham. It's very tasty, but incredibly expensive. You can find a similar locally made product — it will not be so tasty, but it is quite interesting and affordable.
5. Watermelon, rosemary and feta. It's an even crazier combination than melon and ham! But it's worth a try! The main thing is to wait for the season and choose the right watermelon! Cut the chilled watermelon and feta into small pieces (but such that you can put it on a skewer), mix olive oil with fresh or dry rosemary, pour it on top — it's done!
If you summarize everything, then for such salads you will need vegetables and fruits cut into large pieces, salt, pepper, olive oil, some dry seasonings or fresh herbs (basil, rosemary) and, of course, wooden skewers, on which all this will be strung.
