Another summer, fresh dish that can be prepared in just 5 minutes and at the same time you do not need to stand at the stove. Fast, tasty and healthy. And, which is not so unimportant for me personally, it can have quite a lot of different variations.
The original ingredients of the recipe may not appeal to everyone (a mixture of mint and cucumber is quite atypical for us), so I will offer a few modified options with a more universal taste.
Ingredients: mint leaves, cucumber, 1 1/4 cups Greek yogurt, 1 tablespoon white wine vinegar, salt and pepper to taste.
Preparation. Cucumber and mint leaves are crushed and mixed with yogurt, wine vinegar, pepper and salt. This mixture is served with fresh vegetables (celery, sweet pepper, carrots). It is advisable to peel the cucumber from the seeds.
As I have already said, a mixture of mint and cucumber can be quite strange for many, so this mixture can easily be converted into a more familiar one by replacing mint with dill. You can also add some young garlic there.
And you can also not mix cucumber with yogurt, but make cucumber-curd canapes. Cut the cucumber into circles 1-1.5 cm thick, make a mixture of cottage cheese with Greek yogurt, salt, ground black pepper and herbs (of your choice) and spread on the cucumber. You can decorate the top with leaves of lettuce, green basil or dill.
Or cut the cucumber into thicker rings (3-3.5 cm) and make baskets of them for yogurt-curd mass.
If you connect your imagination, there will be even more options! The main thing is not to be afraid to experiment. Moreover, the ingredients are not so rare and expensive. So be bold, because summer is a great time for culinary fantasies ;)
